What makes brick oven pizzas special?
In a perfect pizza, the crust boasts a crisp texture with distinct charred spots, revealing its origin in a blazing hot oven. The dough's interior is soft, elastic, tender, and exudes a delightful aroma, while the toppings are flawlessly cooked. Italian pizza masters achieve this perfection by utilizing brick ovens, often heated to temperatures exceeding 700°F. This intense heat cooks the pizza rapidly, typically in under five minutes.
Brick ovens excel at achieving pizza perfection due to the thermal conductivity of the bricks, which efficiently transfer heat into the dough.
Unlike steel, clay—the main component of bricks and pizza stones—takes longer to heat up when something is placed on it. Consequently, even if two ovens made of each material are heated to the same temperature, the crust in the brick oven won't become as hot as the crust in a steel oven.
In a clay oven, the toppings get more time to cook before the crust is finished, whereas in a steel oven, the crust might burn before the cheese even melts due to the high temperatures. Brick ovens provide the ideal solution by heating the crust at a high yet reasonable temperature, ensuring the toppings have sufficient time to cook properly.
